Le Paris-Brest prioritizes using locally sourced products to delight travellers and the people of Rennes, curious to explore Breton fine dining.
Lover of their Brittany, Chef Servane Pocard has rigorously selected quality produce: “Coucou de Rennes” chicken for their pâté en croûte, foie gras from Breton farms, “coco” beans from Paimpol, Roscoff onions, fish from the catch of the day, organic hen’s eggs, etc.
Nicolas Vauchier’s artisan baker at Rennes train station offers buckwheat flour bread and 100% Breton tasty treats.
The market gardeners at Le Patis practice thoughtful vegetable cultivation, notably by allowing weeds to grow around their vegetables to preserve a natural environment and guarantee their quality. Everything is done by hand, from planting to harvesting.
At Ferme du Luguen, Christophe Lelièvre and his son Antoine continue a family tradition of producing high-quality foie gras and duck meat.
Pig farmers and breeders feed their pigs with grain grown on their own land. They are also members of the Bleu Blanc Coeur association, which aims to further improve the quality of their products.
